-25- <br />methods are used, the junctures between <br />walls and floors shall be covered and <br />sealed. In all other cases, the juncture <br />between walls and floors shall not present <br />an open seam of more than 1/32 inch. <br />(7) Utility Line Installation. Exposed utility <br />service lines and pipes shall be installed in <br />a way that does not obstruct or prevent clean- <br />ing of the floor. In all new or extensively <br />remodeled establishments, installation of <br />exposed horizontal utility lines and pipes on <br />the floor is prohibited. <br />(b) Walls and Ceilings. <br />(1) Maintenance. Walls and ceilings, including <br />doors, windows, skylights, and similr closures, <br />shall be maintained in good repair. <br />(2) Construction. The walls, including nonsupporting <br />partitions, wall coverings, and ceilings of <br />walk-in refrigerating units, food preparation <br />areas, food storage areas, equipment-washing <br />and utensil-washing areas, toilet rooms and <br />vestibules shall be light-colored, smooth, non- <br />absorbant, and easily cleanable. Concrete or <br />pumice blocks used for interior wall construction <br />in these locations shall be furnished and sealed <br />to provide an easily cleanable surface. <br />(3) Exposed Construction. Studs, joists, and rafters <br />shall not be exposed in those areas listed in <br />paragraph (2) of subsection (b) of this rule. <br />If exposed in other rooms or areas, they shall <br />be finished to provide an easily cleanable sur- <br />face. <br />(4) Utility Line Installation. Exposed utility ser- <br />vice lines and pipes shall be installed in a <br />way that does not obstruct or prevent cleaning <br />of the walls and ceilings. Utility service <br />lines and pipes shall not be unnecessarily exposed <br />on walls or ceilings in those areas listed in <br />paragraph (2) of subsection (b) of this regulation. <br />(5) Attachments, Light fixtures, vent covers, wall- <br />mounted fans, decorative materials, and similar <br />equipment attached to walls and ceilings shall <br />be easily cleanable and shall be maintained in <br />good repair. <br />(6) Covering Material Installation. Wall and ceiling <br />covering materials shall be attached and sealed <br />so as to be easily cleanable. <br />(c) Cleaning Physical Facilities. <br />(1) General. Cleaning of floors and walls, except <br />emergency cleaning of floors, shall be done <br />during periods when the least amount of food <br />is exposed, such as after closing or between <br />meals. Floor, mats, duckboards, walls, ceil- <br />ings, and attached equipment and decorative <br />materials shall be kept clean. only dustless <br />methods of cleaning floors and walls shall be <br />used, such as vacuum cleaning, wet cleaning, <br />or the use of dust-arresting sweeping compounds <br />with brooms. <br />(2) Utility Facility. In new or extensively re- <br />modeled establishments at least one utility <br />sink or curbed cleaning facility with a floor <br />drain shall be provided and used for the
