and approved by the Director. A change in ownership of an existing facility or a <br />circumstance that creates the need for the reapplication for a certificate of <br />occupancy of an existing facility will require verification in writing of the <br />adequacy of any existing grease trap or grease interceptor. If any such grease trap <br />or grease interceptor at the existing facility is found to be inadequate based upon <br />the standards in this ordinance the existing facility will be required to design, <br />install, operate and maintain a grease trap/interceptor in accordance with the <br />standards in this ordinance, locally adopted plumbing codes or other applicable <br />ordinances. <br />(3) All grease trap/interceptor waste shall be properly disposed of at a facility in <br />accordance with federal, state, or local regulation. <br />(b) Variance. <br />(1) The owner or operator of a facility may be granted a variance from the <br />requirement to install a grease tra //interceptor by submitting a completed variance <br />request form to the Director. The variance request form will include the <br />following: <br />a. Facility name, mailing address. and street address; <br />b. Facility contact name, title, and phone number; <br />C. Description of food manufacturing. processing, preparation, or service <br />provided by the facility, <br />d. Reason(s) why the facili is requesting a variance; <br />Method(s) and/or equipment used to keep fats. oils, and greases generated <br />by the facility from entering the facility's plumbing and the wastewater <br />collection svstem: and <br />f. A signed statement that the owner/operator understands that. if the <br />facility's food manufacturing processing preparation, or services change, <br />impacting the quantity or quality of the fats, oils, and greases generated, <br />the facility will be required to install a properly sized grease <br />trap/interceptor at the facility's own expense in accordance with this <br />ordinance. <br />(2) A committee consisting of one representative each, as selected by the Director, <br />from the Water/Wastewater Utilities Department and the Environmental Health <br />Department and the Chief Building Official will consider the request for <br />variance The committee shall conduct such investigation as reasonably <br />necessarv to evaluate the merits of the request render a recommendation to the <br />0 Director.
