<br />I <br /> <br />business. subject to the provisions herein, and whose plants are <br />located within or without the City Limits of the City of San Marcos <br />who sell meat or meat products in the City of San Marcos, shall be <br />inspected under the supervision of the Health Department of the <br />City of San Marcos by a meat inspector or assistant meat inspector <br />of the City of San Marcos. who has been assigned by the Chief Meat <br />Inspe~tor with approval of the Director of Public Health to such <br />plant. The charge covering cattle. hog, sheep, and goat inspections <br />will be fixed by the City Council on a per head basis. <br />(b) Where such plants as those described in subsection (a) <br />hereof operate only on a part-time basis. prior arrangements for <br />inspections on a part-time basis must be made with the Chief Meat <br />Inspector. <br />(c) All persons. firms or corporations who do not engage in <br />an exclusively retail business or a business of which its major <br />:portion is retail, being persons, firms or corporations whose <br />businesses are not substantially retail, but who process meat and <br />manufacture meat products or meat food products shall be inspected <br />by the Chief Meat Inspector or City Sanitarian. <br />(I) Overtime work of meat inspection employees. The manage _ <br />ment of a working official establishment desiring to operate under <br />conditions which will require the services of an employee of the <br />City on Sunday or a holiday, or for more than four (4) hours on <br />Saturday or for more than eight working hours of any other day <br />shall sufficiently in advance of the period of over-time, request <br />the inspector in charge or his assistant to provide inspection <br />service. It will be administratively determined from time to time <br />which days constitute holidays. <br />The term "processing", as defined herein, shall have the mean- <br />ing of its customary trade usage and shall include the following: <br />Subjecting the meat to a process of curing, of smoking, of cooking. <br />of seasoning; of flavoring, or mixing, or to any combination of such <br />processes. <br />(d) Mileage shall be charged for inspection outside the County <br />at a rate of Seven (7~) Cents per mile from the City Limits to <br />and from the plant inspected and time. <br /> <br />I <br /> <br />ii <br /> <br />II <br /> <br />.3. <br />
